In a large soup pot over medium heat, add the carrots, onion and garlic. Cook until the vegetables are soft, about 5 minutes. Stir in the paprika, cumin, turmeric, cayenne pepper and bay leaves and cook for an additional minute.
Add the chicken stock or broth and bring to a boil. Add the potatoes and green beans and cook for 10 minutes until the vegetables are tender.
Reduce the heat to low and stir in the shredded rotisserie chicken and parsley leaves. Season with salt and pepper to taste and enjoy!

One of my favorite recipes is for a chicken soup that is originally from the Caucasus region. This hearty and healthy dish is full of flavor and nutrients, making it the perfect meal for any time of day.
To make the soup, you will need two tablespoons of olive oil, one chopped onion, three cloves of minced garlic, two bay leaves, one teaspoon of dried thyme, six cups of chicken broth, one pound of boneless skinless chicken thighs, one large carrot peeled and diced, one large parsnip peeled and diced, one small turnip peeled and diced, and salt and pepper to taste.
In a large pot or Dutch oven over medium heat, heat the olive oil until hot. Add the onion and garlic, and cook until softened. Stir in the bay leaves, thyme, chicken broth, chicken thighs, carrot, parsnip, turnip, salt and pepper. Bring to a boil over high heat. Reduce the heat to low and simmer for 30 minutes.
