Ingredients: 1 whole organic chicken or 4-5 organic chicken breasts 2-3 large carrots, peeled and cut into large chunks 2-3 stalks celery, cut into large chunks 1 medium onion, peeled and quartered 1 head of garlic (optional), cloves separated but not peeled 8 cups filtered water 1 bay leaf 1 teaspoon dried thyme leaves (or 1 tablespoon fresh thyme leaves) Sea salt and black pepper to taste Instructions:

Put all of the ingredients except for the salt and pepper into a large pot or Dutch oven. Bring to a boil over high heat then reduce the heat to low and simmer for about 2 hours until the chicken is cooked through. Remove the cooked chicken from the pot and set aside to cool slightly. Discard the bay leaf and thyme sprigs then use an immersion blender or regular blender to purée the soup until it is completely smooth. Season with salt and pepper to taste then return the pureed soup to the pot. Shred or cube the cooked chicken then add it back into the pot. Heat through until warmed through then serve hot with some fresh parsley or thyme leaves sprinkled on top if desired.* Enjoy!
