Ingredients:

1 whole chicken, boiled

1 onion, chopped

2 carrots, chopped

2 celery stalks, chopped

Instructions:
- Remove the cooked chicken from the bone and chop into small pieces. discarding the skin and bones.
- In a large soup pot, sauté the onion, carrots and celery in olive oil until softened.
- Add the diced tomatoes, boiled chicken, cooked white rice, basil leaves and thyme leaves.
- Bring to a boil over medium heat. Reduce heat and simmer for 30 minutes. Serve hot!

Ingredients: 3-4 boneless and skinless chicken breasts 1 onion, chopped 3-4 cloves garlic, minced 1 large carrot, peeled and diced 1 large celery stalk, diced 4 cups chicken broth 2 bay leaves 1 tsp whole black peppercorns 1 tsp dried thyme leaves 2 or 3 tablespoons tomato paste 1 large zucchini, diced 1 green bell pepper, diced Sea salt and freshly ground black pepper to taste
Instructions: 1. In a large soup pot or Dutch oven, brown the chicken breasts in a bit of oil over medium heat until golden brown. Remove from the pot and set aside. 2. Add the onions and garlic to the pot and cook until softened. 3. Add the carrots, celery, chicken broth, bay leaves, black peppercorns and thyme leaves to the pot and bring to a boil. 4. Reduce heat to low and simmer for 30 minutes. 5. Remove the bay leaves and discard them. 6. Shred the cooked chicken breasts with two forks and add them back into the soup pot. 7. Stir in the tomato paste, zucchini and green bell pepper and season with salt and black pepper to taste. 8. Cook for another 10 minutes or so until the vegetables are tender. 9. Serve hot with some crusty bread on the side for dipping!

Reduce the heat to low and simmer for 1 hour. 2 Add the rice and continue cooking for another 15 minutes, or until the chicken is cooked through and the rice is tender. Season with salt and pepper to taste. Serve hot.
