Ingredients:

1 whole chicken

2 carrots, chopped

2 celery stalks, chopped

1 large onion, chopped

5 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon salt 2 teaspoons dried basil leaves 1/2 teaspoon black pepper 8 cups water or chicken broth 3 cups dry white wine Georgians like to use Rkatsiteli or Tsinandali)

Instructions:

  1. In a large soup pot or Dutch oven over medium heat, sauté onions, garlic, carrots and celery in olive oil until softened. Add chicken, salt, basil and pepper. Pour in water or chicken broth and wine. Bring to a boil; reduce heat to low and simmer for 1-1/2 hours.Remove chicken from pot and let cool slightly before removing meat from bones. Discard skin and bones. Shred meat and return to soup pot. taste for seasoning and adjust as necessary. Serve hot with some nice crusty bread on the side. Enjoy!
