Bring to a boil, then reduce the heat to low and simmer for 1 hour. Season with salt and pepper. Remove the chicken from the pot and let cool slightly before shredding using two forks. Discard the bay leaf. Back to the soup pot add the shredded chicken, parsley leaves, dill leaves, and cooked white rice. Cook for 5 minutes longer until heated through. Serve with lemon wedges if desired.
